Warm Cranberry Walnut Cider
2 cups (500 mL) unsweetened cranberry juice
1 cup ( 250 mL) brewed black tea
1 cup (250 mL) Bacardi Black
ΒΌ cup (60 mL) Walnut Liqueur*
1 cup (250 mL) fresh cranberries
1 cup (250 mL) whipping cream
2 tbsp (30 mL) sugar
1 tsp (5 mL) fresh grated nutmeg
In a medium sauce pan warm, juice tea, rum and liqueur. In a chilled bowl add sugar and nutmeg to cream and whip into firm peaks. Pour warm cider into mugs and garnish with whipped cream and fresh cranberries.
*Walnut Liqueur
1 cup (250 mL) toasted walnuts
1 cup (250 mL) brown sugar
1 cup (250 mL) vodka
1/4 cup (60 mL) brandy
1/4 cup (60 mL) water
1 tsp (5 mL) vanilla
In a large skillet toast walnuts on medium until fragrant, place in a large jar with a tight fitting lid. In a medium sauce pan combine all other ingredients and warm over medium heat until sugar dissolves, pour over walnuts, close lid and store in a cool dry place for at least one month, strain and store in an airtight container.
